So, one of my sweet readers suggested that I do a “Messy Food” related series. [Hi, Bethany!] That got me thinking… I am the laziest cook ever. Mainly because I’m a picky eater. I don’t really like a lot, I go for more bland tasting stuff. Up until about a year ago, I refused to even eat ketchup soooo…

So, I had gastric bypass 3 months before my 30th birthday and I was super depressed that I wasn’t going to really be able to enjoy my favorite foods on my birthday. But! Lucky for me, I have a wonderful friend named Katie who cooked for me and made me her turkey chili. It was so good and so sweet of her. So I took what she did and added stuff to it and made it my own (mainly to trick my child into eating as much healthy stuff as possible).
So I love making this because I just chop everything up and dump it all in a crockpot and call it a day. I usually make this recipe for friends who just had a baby because it makes a ton of food and reheats deliciously!
Let’s call this… Tab’s Turkey Chili? Sure. That sounds lazy enough.
Tab’s Turkey Chili
1 pound of ground turkey, cooked (or chicken, or beef. whatever)
1 can of red beans
1 can of diced tomatoes
1 can of white beans
1 packet of chili seasoning
1 bag of tortilla chips
CHEESE. OMG DON’T FORGET CHEESE.
Throw all that together in a crockpot on low for 6 hours and then top it with cheese and dig in!
Don’t you dare judge the amount of cheese I have on top. I’VE HAD A LONG DAY. Also, my four year old devours this, so it’s kid approved. Probably because all of those veggies absorb the chili seasoning flavor and they don’t taste like actual veggies? I don’t know, I just try not to make any sudden movements while he’s eating it.
